Authentic Indonesian Martabak Recipe | Traditional Sweet & Savory Stuffed Pancake
Indonesian Martabak is one of Indonesia's most famous street foods, enjoyed in both sweet (Martabak Manis) and savory (Martabak Telur) varieties. This recipe focuses on the classic Martabak Telur, a crispy stuffed pancake filled with seasoned ground beef, eggs, onions, and aromatic spices, then fried until golden and crunchy. Originating from Indonesian street food culture, Martabak is commonly served as a snack, appetizer, or light meal with spicy pickled vegetables or chili sauce. Cooking Method
- In a large bowl, combine the flour, salt, warm water, and vegetable oil. Knead until smooth and elastic.
- Divide the dough into four equal portions, coat lightly with oil, cover, and let rest for 45 minutes.
- Heat a skillet over medium heat and cook the ground beef until browned.
- Add the onion, garlic, curry powder, cumin, coriander, salt, and black pepper. Cook for 3–4 minutes, then let the mixture cool slightly.
- Beat the eggs in a bowl and mix in the cooked beef and sliced green onions.
- Stretch one dough portion into a very thin sheet on a lightly oiled surface.
- Place the filling in the center, fold the edges over to form a square parcel, and seal well.
- Heat about ½ inch (1 cm) of oil in a skillet over medium heat.
- Fry each Martabak for 3–4 minutes per side, or until golden brown and crispy.
- Drain on paper towels, slice into squares, and serve hot with pickled vegetables and sweet chili sauce.
