0 likes 0 reviews 26 views

Indonesian Nasi Uduk is a fragrant coconut rice dish originating from Jakarta and one of Indonesia's most popular traditional meals. The rice is cooked in rich coconut milk with aromatic spices such as lemongrass, pandan leaves, bay leaves, and galangal, resulting in soft, fluffy rice with a delicious savory aroma. Nasi Uduk is commonly enjoyed for breakfast but is equally popular for lunch and dinner. It is traditionally served with fried chicken, fried tempeh, tofu, boiled eggs, sambal, cucumber, peanuts, and crispy fried shallots, making it a complete and satisfying Indonesian feast.

Cooking Method

  1. Rinse the jasmine rice until the water runs clear, then drain.
  2. In a large pot or rice cooker, combine the rice, coconut milk, water, lemongrass, pandan leaves, bay leaves, galangal, and salt.
  3. Stir gently to combine all the ingredients.
  4. Cook using the rice cooker setting or bring to a boil on the stovetop.
  5. Reduce the heat to low, cover, and cook for 18–20 minutes, or until the liquid is absorbed.
  6. Turn off the heat and let the rice rest, covered, for 10 minutes.
  7. Remove the lemongrass, pandan leaves, bay leaves, and galangal.
  8. Fluff the rice gently with a fork.
  9. Arrange the coconut rice on serving plates with fried chicken, tempeh, tofu, boiled eggs, cucumber, peanuts, sambal, and fried shallots.
  10. Serve warm and enjoy.
