Mutton Rogan Josh is a famous Kashmiri delicacy known for its rich red color, aromatic spices, and tender pieces of slow-cooked mutton. Traditionally prepared with yogurt, Kashmiri red chilies, and a blend of whole spices, this royal curry has a deep flavor and fragrant aroma. It is a signature dish of Kashmiri cuisine and is best enjoyed with steamed rice, naan, or traditional breads.
Heat oil or ghee in a heavy pan and add whole spices such as cinnamon, cardamom, cloves, and bay leaves.
Add mutton pieces and sauté until they turn golden brown.
Mix in ginger powder, garlic, Kashmiri red chili powder, turmeric, and other spices.
Add whisked yogurt slowly while stirring continuously to prevent curdling.
Pour in water and cook the mutton on low heat until it becomes tender and the gravy thickens.
Add garam masala and simmer for a few more minutes to enhance the flavors.
Garnish with fresh coriander and serve hot with rice, naan, or roti.
