Indonesian Lontong Recipe | Authentic Compressed Rice Cakes
Lontong is a traditional Indonesian rice cake made by tightly wrapping rice in banana leaves or food-safe plastic before boiling it until firm and compact. Unlike ordinary steamed rice, Lontong has a dense yet tender texture that makes it perfect for absorbing flavorful sauces and curries. It is a staple throughout Indonesia and is commonly served alongside dishes such as Soto Ayam, Gado-Gado, Satay (Sate Ayam), Lontong Sayur, Rendang, Opor Ayam, and many other classic Indonesian meals.
During cooking, the rice expands inside its wrapping, creating a smooth, compact cake that can be sliced into neat rounds or cubes. Traditionally wrapped in fresh banana leaves, Lontong develops a subtle earthy aroma that enhances its flavor. When banana leaves are unavailable, heat-safe food-grade plastic wrap or special rice-cooking bags may be used as an alternative.
Lontong has a mild flavor, making it the perfect companion for rich curries, spicy sambal, peanut sauce, coconut-based dishes, and grilled meats. It is commonly eaten for breakfast, lunch, dinner, and during festive celebrations across Indonesia, Malaysia, and Singapore.
Simple to prepare with only a few ingredients, homemade Lontong is an essential component of authentic Indonesian cuisine and adds a unique texture to many traditional dishes.
Cooking Method
- Rinse the jasmine rice several times until the water runs mostly clear.
- Soak the rice in water for 30 minutes, then drain thoroughly.
- Cut the banana leaves into rectangles large enough to form cylinders.
- Roll each banana leaf into a tube and secure one end with toothpicks or kitchen twine.
- Fill each tube only about halfway with the drained rice to allow room for expansion.
- Seal the open end securely.
- Arrange the rice rolls in a large pot.
- Completely cover them with water.
- Bring the water to a boil.
- Reduce to a gentle simmer and cook for 2½–3 hours, adding more hot water as needed to keep the rolls submerged.
- Remove the Lontong from the water and allow it to cool completely.
- Refrigerate for several hours or overnight to firm up.
- Slice into rounds or cubes before serving.
