Filipino Chicken Adobo Recipe | Authentic Classic Philippine Chicken Adobo
Chicken adobo is the national dish of the Philippines and one of the country's most beloved comfort foods. This classic recipe features tender chicken slowly braised in a rich mixture of soy sauce, vinegar, garlic, bay leaves, whole black peppercorns, and a touch of brown sugar. The result is juicy, flavorful chicken coated in a glossy, savory-tangy sauce that's perfect for serving over steamed rice.
The beauty of Filipino Adobo lies in its simplicity. A handful of pantry ingredients transform into a deeply flavorful dish through slow simmering. The vinegar provides a bright tanginess, while soy sauce delivers rich umami. Fresh garlic infuses the chicken with aromatic flavor, and bay leaves and whole peppercorns add subtle warmth. As the sauce reduces, it becomes thick and glossy, coating every piece of chicken with irresistible flavor.
Traditionally made with bone-in chicken, Adobo can also be prepared with pork or a combination of both. Some regional variations include coconut milk, potatoes, boiled eggs, or chilies for additional richness and flavor. This versatile dish tastes even better the next day, making it ideal for meal prep and leftovers.
Serve Filipino Chicken Adobo with hot steamed jasmine rice, garlic fried rice, pickled vegetables, or sautéed greens for a complete and satisfying meal. Whether you're exploring Filipino cuisine for the first time or recreating a family favorite, this authentic recipe delivers rich, comforting flavors in every bite.
Cooking Method
- Combine the chicken, soy sauce, and half of the garlic in a bowl. Marinate for 30 minutes to 2 hours.
- Heat the vegetable oil in a large pot or deep skillet over medium-high heat.
- Remove the chicken from the marinade (reserve the marinade) and brown each piece for 3–4 minutes per side.
- Add the remaining garlic and sliced onion (if using). Cook for 2 minutes.
- Pour in the reserved marinade, vinegar, water, bay leaves, and whole peppercorns.
- Do not stir immediately after adding the vinegar. Let it boil for 2–3 minutes to mellow the acidity.
- Reduce the heat to low, cover, and simmer for 30–35 minutes until the chicken is tender.
- Stir in the brown sugar if using.
- Remove the lid and simmer for another 10–15 minutes until the sauce reduces and thickens slightly.
- Add boiled eggs during the final 5 minutes if desired.
- Taste and adjust seasoning if needed.
- Garnish with sliced green onions and serve hot over steamed rice.
