🇵🇭 Filipino Chicken Adobo...PNG1.01 MBChicken adobo is one of the most iconic dishes in Philippine cuisine, celebrated for its rich, savory, tangy, and garlicky flavor. Often regarded as the national dish of the Philippines, Chicken Adobo is made by slowly braising chicken in a flavorful combination of soy sauce, vinegar, garlic, bay leaves, and whole black peppercorns until the meat becomes incredibly tender and infused with bold flavors. The sauce reduces into a glossy glaze that perfectly coats every piece of chicken, making it irresistible when served over hot steamed rice.
The beauty of Filipino Chicken Adobo lies in its simplicity. A handful of everyday ingredients transform into a deeply satisfying meal through slow simmering. The soy sauce provides rich umami, vinegar adds its signature tanginess, garlic infuses the dish with aromatic depth, while bay leaves and whole peppercorns contribute subtle earthy notes. Some families also add a touch of brown sugar for balance, while others lightly fry the chicken after simmering to create crispy edges before returning it to the sauce.
Chicken Adobo tastes even better the following day as the flavors continue to develop, making it an excellent choice for meal prep and leftovers. It pairs wonderfully with steamed jasmine rice, garlic fried rice, sautéed vegetables, or pickled papaya (atchara).
Whether you're exploring Filipino cuisine for the first time or recreating a beloved family recipe, this authentic Chicken Adobo delivers comforting, restaurant-quality flavor that's both easy to prepare and deeply satisfying.
Cooking Method
In a bowl, combine the chicken, soy sauce, and half of the crushed garlic.
Marinate for 30 minutes to 2 hours.
Heat the vegetable oil in a large pot or deep skillet over medium-high heat.
Remove the chicken from the marinade (reserve the marinade) and brown each piece for 3–4 minutes per side.
Add the remaining garlic and sliced onion, cooking for 2 minutes.
Pour in the reserved marinade, vinegar, water, bay leaves, and whole peppercorns.
Allow the mixture to boil without stirring for about 2–3 minutes to mellow the vinegar.
Reduce the heat to low, cover, and simmer for 30–35 minutes until the chicken is tender.
Stir in the brown sugar if using.
Remove the lid and continue simmering for another 10–15 minutes until the sauce thickens slightly.
Add hard-boiled eggs during the final 5 minutes if desired.
Taste and adjust seasoning if necessary.
Garnish with sliced green onions and serve hot over steamed rice.
