Cooking Method
Dry roast all the Chettinad spice mix ingredients until fragrant. Cool slightly, then grind into a fine paste or powder with the toasted coconut.
Heat the oil in a large pot over medium heat.
Add the curry leaves and sliced onions, then sauté until golden brown.
Stir in the garlic and ginger, cooking for 1 minute.
Add the chopped tomatoes and cook until soft.
Mix in the turmeric and the prepared Chettinad spice mixture.
Add the chicken pieces and stir well to coat them with the spices.
Pour in the water, cover, and simmer for 30–35 minutes, or until the chicken is tender and the gravy has thickened.
Taste and adjust the seasoning with salt if needed.
