Indonesian Ikan Bakar Recipe | Authentic Indonesian Grilled Fish
Ikan bakar is a classic Indonesian seafood dish featuring whole fish marinated in fragrant spices and grilled over charcoal until beautifully charred and smoky. Cooking Method
- Blend the shallots, garlic, ginger, galangal, turmeric, coriander, chilies, and candlenuts into a smooth spice paste.
- Heat the vegetable oil in a skillet and cook the spice paste for 3–4 minutes until fragrant.
- Allow the spice paste to cool slightly.
- Mix it with the kecap manis, lime juice, soy sauce, salt, and white pepper.
- Rub the marinade all over the fish, including inside the cavity.
- Marinate for 30–60 minutes in the refrigerator.
Grill
- Preheat the grill to medium-high heat.
- Oil the grill grates to prevent sticking.
- Grill the fish for 6–8 minutes per side, depending on thickness.
- Brush with the basting sauce several times during grilling.
- Continue cooking until the fish flakes easily and the skin is lightly charred.
Serve
- Transfer to a serving platter.
- Garnish with fresh cilantro.
- Serve immediately with steamed rice, sambal, cucumber, tomato, and lime wedges.
