Rajasthani Dal Baati
Rajasthani Dal Baati is one of the most iconic traditional dishes of Rajasthan, combining crispy baked wheat dumplings (baati) with a flavorful mixed lentil curry (dal). The baati is generously topped with melted ghee and served alongside spicy dal, often accompanied by churma, pickle, and onions. This wholesome, protein-rich meal is celebrated for its rich taste and authentic Rajasthani flavors.
Cooking Method
- Prepare the baati dough using whole wheat flour, semolina, ghee, baking powder, and salt. Shape into round balls.
- Bake the baatis in a preheated oven or traditional clay oven until golden brown and crisp.
- Pressure cook mixed lentils until soft.
- Heat ghee, add cumin seeds, garlic, onions, tomatoes, and spices to prepare the tempering.
- Mix the cooked lentils into the tempering and simmer for 10–15 minutes.
- Dip the hot baatis in melted ghee before serving.
- Serve hot with dal, churma, pickle, and fresh onions.
