Chicken Hakka Noodles Recipe | Indo-Chinese Stir-Fried Chicken Noodles
Chicken Hakka Noodles are a popular Indo-Chinese dish featuring tender chicken, Hakka noodles, and crisp vegetables stir-fried over high heat with savory sauces and aromatic seasonings. Inspired by the Hakka Chinese community and adapted to Indian tastes, this flavorful noodle dish is loved for its smoky "wok hei" aroma, vibrant vegetables, and perfectly seasoned chicken. Cooking Method
- Cook the Hakka noodles according to the package instructions until just tender. Drain, rinse with cold water, and toss with a little oil.
- Heat 1 tablespoon of vegetable oil in a wok over high heat.
- Add the chicken and stir-fry for 4–5 minutes until cooked through. Remove and set aside.
- Add the remaining oil, then stir-fry the garlic and ginger for 30 seconds until fragrant.
- Add the onion, carrots, cabbage, and bell peppers. Stir-fry over high heat for 3–4 minutes, keeping the vegetables crisp.
- Return the cooked chicken to the wok.
- Add the cooked noodles and toss everything together.
- Pour in the light soy sauce, dark soy sauce, oyster sauce, rice vinegar, sesame oil, white pepper, and salt.
- Stir-fry for another 2–3 minutes until the noodles are evenly coated and heated through.
- Garnish with chopped spring onion greens and sesame seeds. Serve immediately.
