Authentic Korean Kimchi Jjigae Recipe | Spicy Kimchi Stew
Kimchi Jjigae is one of South Korea's most iconic comfort foods, made with well-fermented kimchi, pork belly, tofu, and a rich, spicy broth seasoned with gochugaru (Korean chili flakes) and gochujang (Korean chili paste). The older the kimchi, the deeper and more complex the flavor of the stew. This hearty one-pot meal is a staple in Korean households and is commonly enjoyed for lunch or dinner alongside steamed rice and a variety of Korean side dishes (banchan). Warm, spicy, tangy, and deeply satisfying, Kimchi Jjigae is the perfect dish for cold weather or whenever you're craving authentic Korean flavors.
Cooking Method
- Heat the vegetable oil in a large pot over medium heat.
- Add the pork belly and cook until lightly browned.
- Stir in the onion and garlic, then sauté for 2 minutes.
- Add the chopped kimchi and cook for 5 minutes, allowing it to soften and develop flavor.
- Stir in the gochujang, gochugaru, soy sauce, sugar, sesame oil, and kimchi juice.
- Pour in the broth and bring to a boil.
- Reduce the heat and simmer for 20 minutes.
- Gently add the tofu slices and simmer for another 5–7 minutes.
- Sprinkle in the sliced green onions and season with black pepper to taste.
- Serve hot with steamed rice and your favorite Korean side dishes.
