 Tahu Gejrot is a famous Indonesian street food originating from Cirebon, West Java. This delicious snack features crispy fried tofu cut into bite-sized pieces and drenched in a bold, flavorful dressing made from palm sugar, tamarind, garlic, shallots, bird's eye chilies, and sweet soy sauce. The combination of crispy tofu and the sweet, tangy, spicy sauce creates a refreshing yet satisfying dish that is enjoyed as an appetizer, snack, or light meal throughout Indonesia. 

Traditionally, Tahu Gejrot uses tahu pong, a type of hollow fried tofu that absorbs the flavorful sauce beautifully. The dressing is made by crushing fresh garlic, shallots, and chilies before mixing them with palm sugar syrup, tamarind water, vinegar, and kecap manis (Indonesian sweet soy sauce). The result is a perfectly balanced sauce with sweetness, acidity, savory depth, and fiery heat. 

Unlike many fried tofu dishes, Tahu Gejrot is served immediately after the sauce is poured over the tofu, allowing the crispy exterior to remain slightly crunchy while soaking up the aromatic dressing. It is often enjoyed fresh from roadside food vendors and is one of Indonesia’s most beloved vegetarian street foods. 

Whether served as a snack, appetizer, or side dish, Indonesian Tahu Gejrot offers an explosion of authentic Indonesian flavors in every bite. 

Cooking Method


Prepare the Tofu

 

  1.  Cut the tofu into large cubes. 
  2.  Heat vegetable oil to 350°F (175°C)
  3.  Fry the tofu for 5–7 minutes until golden and crispy. 
  4.  Drain on paper towels. 
  5.  Cut the fried tofu into bite-sized pieces and place on a serving plate. 


Prepare the Sauce

 

  1.  In a small saucepan, combine the palm sugar and water. 
  2.  Heat until the sugar dissolves completely. 
  3.  Stir in the tamarind water, kecap manis, vinegar, and salt. 
  4.  Simmer for 2–3 minutes, then remove from heat. 
  5.  Using a mortar and pestle, crush the garlic, shallots, and bird's eye chilies into a coarse mixture. 
  6.  Add the crushed aromatics to the warm sauce and stir well. 


Assemble

 

  1.  Pour the warm sauce generously over the fried tofu. 
  2.  Garnish with chopped green onions and fresh cilantro if desired. 
  3.  Serve immediately while the tofu is still warm.
