Cooking Method


  1. Drain the soaked glutinous rice thoroughly.
  2. Heat a non-stick skillet over medium heat and lightly grease it with vegetable oil.
  3. Spread the glutinous rice evenly over the skillet and cook for 5–6 minutes until partially tender.
  4. In a bowl, whisk together the eggs, garlic, shallot, dried shrimp, salt, and white pepper.
  5. Pour the egg mixture evenly over the rice.
  6. Sprinkle the toasted coconut over the top.
  7. Continue cooking until the eggs are set and the bottom becomes golden and crispy.
  8. Carefully flip the pan or briefly invert it over the heat to lightly toast the top, following the traditional method if possible.
  9. Transfer to a serving plate and sprinkle generously with fried shallots and extra toasted coconut.
  10. Serve immediately while hot and crispy.
