Authentic Indonesian Ayam Penyet Recipe |Traditional Smashed Fried Chicken
Indonesian Ayam Penyet is a beloved Indonesian fried chicken dish known for its crispy exterior, tender meat, and fiery sambal. Originating from East Java, Ayam Penyet literally means "smashed chicken," referring to the technique of lightly pressing the freshly fried chicken before serving to make it extra tender and allow it to absorb the spicy sambal. The chicken is first simmered in aromatic spices, then deep-fried until golden and crispy before being served with sambal, steamed rice, fried tofu, tempeh, cucumber, and fresh vegetables. This flavorful dish is a favorite across Indonesia and is perfect for lunch or dinner.
Cooking Method
- In a large pot, combine the chicken, water, garlic, shallots, ginger, turmeric, lemongrass, bay leaves, coriander, salt, and white pepper.
- Bring to a boil, then reduce the heat and simmer for 35–40 minutes, or until the chicken is tender.
- Remove the chicken and allow it to drain well.
- Heat vegetable oil to 350°F (175°C) and deep-fry the chicken for 8–10 minutes, or until golden brown and crispy.
- For the sambal, boil or lightly roast the chilies, garlic, shallots, and tomato for a few minutes.
- Blend the cooked ingredients with the shrimp paste, palm sugar, salt, and lime juice until slightly coarse.
- Place a spoonful of sambal on a mortar or plate.
- Lightly press the fried chicken onto the sambal using a pestle or heavy spoon to gently flatten it.
- Arrange the chicken on a serving plate with steamed rice, fried tofu, tempeh, cucumber, and lettuce.
- Serve immediately with extra sambal on the side.
