Indonesian Satay (Sate Ayam) Recipe | Authentic Grilled Chicken Skewers with Peanut Sauce
Sate ayam is one of Indonesia’s most famous street foods, featuring tender marinated chicken skewers grilled over charcoal and served with a rich, creamy peanut sauce. Popular throughout Indonesia and Southeast Asia, Sate Ayam is loved for its smoky aroma, juicy chicken, and the irresistible combination of sweet, savory, nutty, and mildly spicy flavors. The chicken is marinated in a fragrant blend of garlic, shallots, coriander, turmeric, kecap manis (Indonesian sweet soy sauce), and lime juice. After marinating, the chicken is threaded onto bamboo skewers and grilled over hot charcoal, where it develops beautifully caramelized edges and a smoky flavor.
The highlight of Sate Ayam is its authentic peanut sauce, made with roasted peanuts, garlic, chilies, kecap manis, coconut milk, and lime juice. Cooking Method
Marinate the Chicken
- In a bowl, combine the kecap manis, oil, garlic, shallots, coriander, turmeric, lime juice, brown sugar, salt, and black pepper.
- Add the chicken cubes and mix until evenly coated.
- Cover and refrigerate for 2–4 hours, preferably overnight.
Prepare the Peanut Sauce
- Blend the roasted peanuts, garlic, and chilies into a coarse paste.
- Transfer to a saucepan.
- Add the coconut milk, kecap manis, soy sauce, brown sugar, lime juice, and water.
- Simmer over low heat for 8–10 minutes, stirring frequently until smooth and thick.
Grill the Satay
- Thread the marinated chicken onto the soaked bamboo skewers.
- Preheat a charcoal grill or grill pan to medium-high heat.
- Grill the skewers for 4–5 minutes per side, brushing occasionally with additional kecap manis for extra caramelization.
- Cook until the chicken reaches an internal temperature of 165°F (74°C).
Serve
- Arrange the skewers on a serving platter.
- Spoon peanut sauce over the satay or serve it on the side.
- Garnish with fried shallots, cucumber, onion slices, and lime wedges.
