Cooking Method
- Heat the olive oil in a large Dutch oven or soup pot over medium heat.
- Add the sliced sausage and cook for 5–6 minutes until browned. Remove and set aside.
- In the same pot, sauté the onion, carrots, and celery for 5 minutes until softened.
- Add the garlic and cook for 30 seconds until fragrant.
- Stir in the tomato paste and cook for 1 minute.
- Add the diced tomatoes, lentils, broth, thyme, rosemary, bay leaf, smoked paprika, salt, and black pepper.
- Return the browned sausage to the pot.
- Bring the stew to a boil, then reduce the heat to low.
- Cover and simmer for 35–40 minutes, until the lentils are tender.
- Stir in the spinach or kale during the final 5 minutes of cooking.
- Remove the bay leaf.
- Stir in the fresh lemon juice.
