Japanese Gyoza | Crispy Pan-Fried Japanese Dumplings
Japanese Gyoza are delicious pan-fried dumplings filled with a savory mixture of ground pork, cabbage, garlic, ginger, and green onions. These popular Japanese dumplings have a beautifully crisp golden bottom while the wrapper remains tender and slightly chewy. They are commonly served as an appetizer, side dish, or part of a Japanese-style meal.
The filling is seasoned with soy sauce, sesame oil, and other aromatic ingredients, creating a rich umami flavor in every bite. Gyoza are first pan-fried to develop their signature crispy base, then briefly steamed with water under a lid to cook the filling and soften the wrapper. The lid is removed at the end so the bottoms become crisp again.
Serve Japanese Gyoza hot with a simple dipping sauce made from soy sauce, rice vinegar, and chili oil. They are perfect for family dinners, parties, or homemade Japanese restaurant-style meals.
Cooking Method
- Place the chopped cabbage in a bowl and sprinkle lightly with salt.
- Let it sit for 10 minutes, then squeeze out as much excess water as possible.
- In a large bowl, combine the ground pork, cabbage, garlic, ginger, green onions, soy sauce, sesame oil, rice vinegar, and sugar.
- Mix thoroughly until the filling becomes well combined and slightly sticky.
- Place one gyoza wrapper in your hand.
- Add about 1 tablespoon of filling to the center.
- Moisten the edge of the wrapper with water.
- Fold the wrapper over the filling and pleat the edges to seal.
- Repeat with the remaining wrappers and filling.
- Heat the vegetable oil in a large nonstick skillet over medium-high heat.
- Arrange the gyoza flat-side down in a single layer.
- Cook for 3–4 minutes, until the bottoms become golden brown.
- Carefully pour the water into the skillet.
- Immediately cover with a lid.
- Steam for 5–7 minutes, until the filling is fully cooked.
- Remove the lid and continue cooking for 1–2 minutes so excess water evaporates and the bottoms become crisp again.
- Mix the dipping sauce ingredients in a small bowl.
- Transfer the gyoza to a serving plate.
- Serve hot with the dipping sauce.
