Japanese Gyoza | Crispy Pan-Fried Japanese Dumplings

 Japanese Gyoza are delicious pan-fried dumplings filled with a savory mixture of ground pork, cabbage, garlic, ginger, and green onions. These popular Japanese dumplings have a beautifully crisp golden bottom while the wrapper remains tender and slightly chewy. They are commonly served as an appetizer, side dish, or part of a Japanese-style meal. 

The filling is seasoned with soy sauce, sesame oil, and other aromatic ingredients, creating a rich umami flavor in every bite. Gyoza are first pan-fried to develop their signature crispy base, then briefly steamed with water under a lid to cook the filling and soften the wrapper. The lid is removed at the end so the bottoms become crisp again. 

Serve Japanese Gyoza hot with a simple dipping sauce made from soy sauce, rice vinegar, and chili oil. They are perfect for family dinners, parties, or homemade Japanese restaurant-style meals. 

Cooking Method


  1.  Place the chopped cabbage in a bowl and sprinkle lightly with salt. 
  2.  Let it sit for 10 minutes, then squeeze out as much excess water as possible. 
  3.  In a large bowl, combine the ground pork, cabbage, garlic, ginger, green onions, soy sauce, sesame oil, rice vinegar, and sugar. 
  4.  Mix thoroughly until the filling becomes well combined and slightly sticky. 
  5.  Place one gyoza wrapper in your hand. 
  6.  Add about 1 tablespoon of filling to the center. 
  7.  Moisten the edge of the wrapper with water. 
  8.  Fold the wrapper over the filling and pleat the edges to seal. 
  9.  Repeat with the remaining wrappers and filling. 
  10.  Heat the vegetable oil in a large nonstick skillet over medium-high heat. 
  11.  Arrange the gyoza flat-side down in a single layer. 
  12.  Cook for 3–4 minutes, until the bottoms become golden brown. 
  13.  Carefully pour the water into the skillet. 
  14.  Immediately cover with a lid. 
  15.  Steam for 5–7 minutes, until the filling is fully cooked. 
  16.  Remove the lid and continue cooking for 1–2 minutes so excess water evaporates and the bottoms become crisp again. 
  17.  Mix the dipping sauce ingredients in a small bowl. 
  18.  Transfer the gyoza to a serving plate. 
  19.  Serve hot with the dipping sauce.
