Japanese Tamagoyaki | Classic Japanese Rolled Omelette Recipe

 Japanese Tamagoyaki is a traditional Japanese rolled omelette made by cooking thin layers of seasoned egg and carefully rolling them together into a soft, fluffy, rectangular shape. Known for its delicate texture and subtly sweet, savory flavor, Tamagoyaki is a popular part of Japanese breakfasts, bento boxes, sushi meals, and home cooking.

The eggs are whisked with soy sauce, mirin, sugar, and a little dashi to create a beautifully balanced flavor. The mixture is cooked in thin layers in a rectangular tamagoyaki pan, with each layer rolled over the previous one. This repeated process creates the distinctive spiral-like layers inside the omelette.

Japanese Tamagoyaki can be enjoyed warm or chilled and makes an excellent breakfast, snack, lunchbox addition, or sushi accompaniment. Simple ingredients and careful layering create an elegant Japanese dish that is both visually appealing and delicious. 

Cooking Method


  1. Crack the eggs into a bowl.
  2. Add the dashi, mirin, soy sauce, sugar, and salt.
  3. Gently whisk until well combined, avoiding excessive bubbles.
  4. Heat a rectangular tamagoyaki pan over medium-low heat.
  5. Lightly brush the pan with oil.
  6. Pour a thin layer of the egg mixture into the pan.
  7. Cook until the bottom is set but the top remains slightly soft.
  8. Roll the omelette from one end to the other using chopsticks or a spatula.
  9. Push the rolled omelette to one side of the pan.
  10. Lightly oil the exposed surface.
  11. Pour another thin layer of egg mixture underneath and around the existing roll.
  12. Cook until partially set, then roll the existing omelette over the new layer.
  13. Repeat until all the egg mixture has been used.
  14. Gently press the omelette into a neat rectangular shape while cooking.
  15. Transfer to a cutting board and allow it to rest for a few minutes.
  16. Slice into thick pieces and serve.
