 Middle Eastern Za’atar Chicken is a flavorful and aromatic dish featuring tender chicken coated in olive oil, lemon juice, garlic, and fragrant za’atar spice. Za’atar is a beloved Middle Eastern seasoning blend commonly made with dried herbs, sesame seeds, and sumac, giving the chicken a distinctive earthy, nutty, citrusy, and slightly tangy flavor. 

The chicken is marinated to allow the herbs and spices to penetrate the meat before being roasted until golden brown and juicy. As it cooks, the za’atar develops a wonderfully fragrant crust while the lemon and garlic add brightness and depth. This simple preparation creates an impressive meal without requiring complicated ingredients or techniques. 

Za’atar Chicken is perfect for a wholesome family lunch or dinner and pairs beautifully with warm pita, hummus, tabbouleh, roasted vegetables, couscous, or fragrant rice. Finish with fresh parsley, extra za’atar, and lemon wedges for a fresh Mediterranean-style presentation. 

Cooking Method


  1.  Place the chicken in a large bowl. 
  2.  Add olive oil, za’atar, lemon juice, garlic, paprika, cumin, black pepper, and salt. 
  3.  Mix thoroughly until the chicken is evenly coated. 
  4.  Cover and refrigerate for at least 30 minutes, or preferably several hours. 
  5.  Preheat the oven to 425°F (220°C)
  6.  Arrange the chicken pieces on a lightly greased baking tray. 
  7.  Roast for 35–45 minutes, depending on the size of the chicken pieces. 
  8.  Turn the chicken halfway through cooking for even browning. 
  9.  Continue roasting until the chicken is golden and reaches a safe internal temperature. 
  10.  For extra browning, broil for 2–3 minutes at the end. 
  11.  Remove the chicken and let it rest for 5 minutes
  12.  Sprinkle with fresh parsley and a little extra za’atar. 
  13.  Serve hot with lemon wedges, pita, hummus, rice, or salad.
