Huevos Rancheros is a classic Mexican breakfast made with fried eggs served over warm corn tortillas and topped with a flavorful ranch-style tomato and chili sauce. Cooking Method
- Heat the olive oil in a skillet over medium heat.
- Add the onion and jalapeño and sauté for 3–4 minutes until softened.

- Add the chopped tomatoes, cumin, salt, black pepper, and water.
- Simmer the sauce for 8–10 minutes, stirring occasionally, until the tomatoes soften and the mixture becomes slightly thick.
- While the sauce cooks, heat a separate skillet and lightly fry the corn tortillas for about 30 seconds per side until warm and lightly crisp around the edges.
- Heat the vegetable oil in a skillet over medium heat. Crack in the eggs and fry until the whites are set and the yolks reach your preferred doneness.
- Place one warm tortilla on each plate and spoon ranchero sauce over and around it.
- Top each tortilla with a fried egg and serve with refried beans and sliced avocado.
- Garnish with queso fresco, fresh cilantro, and lime wedges. Serve immediately.
