Truffle Fries | Crispy Parmesan Garlic Truffle Fries Recipe
Truffle Fries are an indulgent twist on classic French fries, combining crispy golden potatoes with fragrant truffle oil, Parmesan cheese, garlic, and fresh herbs. The fries are crunchy on the outside, fluffy inside, and finished with a rich earthy truffle aroma.
For the best texture, the potatoes are soaked to remove excess starch and then fried twice until perfectly crisp. Tossing the hot fries with truffle oil, freshly grated Parmesan, parsley, and garlic creates a restaurant-style side dish that's surprisingly easy to make at home.
Serve Truffle Fries alongside burgers, steaks, grilled chicken, sandwiches, or as an impressive appetizer with garlic aioli.
Cooking Method
- Wash and peel the potatoes.
- Cut them into evenly sized fries about ¼–½ inch thick.
- Place the fries in a large bowl of cold water.
- Soak for 30–60 minutes to remove excess starch.
- Drain and rinse the potatoes thoroughly.
- Pat them completely dry with clean kitchen towels.
- Heat the oil in a deep heavy-bottomed pot to 325°F (165°C).
- Fry the potatoes in small batches for 4–5 minutes, until tender but still pale.
- Remove and drain on a wire rack.
- Let the fries rest for 10–15 minutes.
- Increase the oil temperature to 375°F (190°C).
- Fry the potatoes again for 2–4 minutes, until crisp and golden.
- Drain immediately and transfer the hot fries to a large bowl.
- Drizzle with truffle oil and toss gently.
- Add the Parmesan, minced garlic, parsley, black pepper, garlic powder, and salt.
- Toss until the fries are evenly coated.
- Taste and adjust the seasoning if needed.
- Garnish with additional Parmesan and parsley.
- Serve immediately with garlic aioli or your favorite dipping sauce.
