Har Gow | Classic Chinese Shrimp Dumplings

 Har Gow are delicate Cantonese shrimp dumplings and one of the most recognizable dishes served at traditional Chinese dim sum. They are known for their translucent, slightly chewy wrappers and juicy shrimp filling seasoned with ginger, sesame oil, and subtle savory aromatics. 

The signature translucent wrapper is made with wheat starch and tapioca starch, creating a smooth and delicate texture that becomes almost transparent after steaming. The shrimp filling remains juicy and flavorful inside, while the pleated edges give Har Gow their beautiful traditional appearance. 

These dumplings are best served freshly steamed while the wrappers are tender and the shrimp filling is hot. Pair them with light soy sauce, chili oil, or Chinese tea for a classic dim sum experience. Har Gow are perfect for brunch, appetizers, family gatherings, or a homemade dim sum platter.

  1.  Combine the chopped shrimp, ginger, green onions, soy sauce, sesame oil, sugar, white pepper, salt, and cornstarch in a bowl. 
  2.  Mix thoroughly until the filling becomes slightly sticky. 
  3.  Cover and refrigerate for 20–30 minutes
  4.  Combine wheat starch, tapioca starch, and salt in a heatproof bowl. 
  5.  Carefully add the boiling water while stirring continuously. 
  6.  Mix until a dough forms. 
  7.  Add the vegetable oil and knead carefully until smooth. 
  8.  Cover the dough and let it rest for 10 minutes
  9.  Divide the dough into small portions. 
  10.  Roll each portion into a thin, round wrapper. 
  11.  Place about 1 tablespoon of shrimp filling in the center. 
  12.  Fold the wrapper around the filling and pleat the edges to seal. 
  13.  Line a steamer with parchment paper or lightly oiled cabbage leaves. 
  14.  Arrange the Har Gow with space between each dumpling. 
  15.  Steam over boiling water for 6–8 minutes, until the wrappers become translucent and the shrimp is fully cooked. 
  16.  Carefully remove the dumplings from the steamer. 
  17.  Serve immediately with soy sauce, chili oil, or your favorite dim sum dipping sauce.
