Boondi is a popular Indian sweet made from tiny fried gram flour pearls soaked in fragrant sugar syrup. Soft, sweet, and aromatic, it is a classic dessert for festivals, celebrations, and special occasions.
Mix gram flour with water to make a smooth, flowing batter.
Heat oil or ghee in a deep pan.
Pour the batter through a boondi ladle into the hot oil and fry the tiny pearls until lightly golden.
Prepare a sugar syrup with sugar and water until slightly sticky.
Add the fried boondi to the warm syrup and mix gently.
Add cardamom powder and roasted nuts.
Allow the boondi to absorb the syrup, then serve warm or at room temperature.
