One of the most popular versions is filled with creamy mashed potatoes, farmer’s cheese or ricotta-style cheese, and sautéed onions. The dumplings are boiled until tender and can then be pan-fried in butter for a beautifully golden, slightly crispy finish.
These comforting Polish dumplings are a staple of Eastern European cuisine and can be enjoyed as a main course, side dish, or satisfying snack. The creamy potato and cheese filling provides a rich, hearty center, while caramelized onions add sweetness and depth.
Pierogi are traditionally served warm with sour cream, melted butter, crispy onions, or fresh herbs. They can also be filled with mushrooms, cabbage, meat, spinach, or sweet fruit for different variations. Homemade Pierogi are especially delicious when boiled and then lightly fried until golden.
Cooking Method
Combine the flour and salt in a large bowl.
Add the egg, melted butter, and warm water.
Mix until a soft dough forms.
Knead for 5–8 minutes until smooth and elastic.
Cover and let the dough rest for 30 minutes.
Meanwhile, melt the butter in a skillet.
Add the chopped onion and cook for 6–8 minutes until golden and softened.
Mix the mashed potatoes, cheese, cooked onion, black pepper, and salt.
Roll the dough thin on a lightly floured surface.
Cut out circles using a round cutter or glass.
Place about 1 tablespoon of filling in the center of each circle.
Fold the dough over the filling to create a half-moon shape.
Press the edges firmly together to seal.
Bring a large pot of salted water to a gentle boil.
Add the Pierogi in batches.
Cook for 3–5 minutes, until they float to the surface.
Remove with a slotted spoon and drain.
For crispy Pierogi, melt a little butter in a skillet.
Pan-fry the boiled dumplings for 2–3 minutes per side, until golden.
Serve hot with sour cream, melted butter, and crispy onions if desired.
