mchi Fried Rice Recipe | Easy Korean Kimchi Bokkeumbap

Kimchi Fried Rice, also known as Kimchi Bokkeumbap, is a flavorful Korean comfort food made with cooked rice, tangy fermented kimchi, garlic, vegetables, and savory seasonings. Quick, satisfying, and easy to customize, this popular Korean dish transforms leftover rice and kimchi into a delicious one-pan meal. Gochujang adds a rich spicy depth while sesame oil and toasted sesame seeds provide a nutty aroma. Traditionally served with a fried egg and sliced green onions, Kimchi Fried Rice is perfect for a quick lunch, dinner, or late-night meal.

Cooking Method

  1. Break up the chilled cooked rice and set it aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the chopped kimchi and carrot. Stir-fry for 3–4 minutes until the kimchi softens and becomes fragrant.
  4. Add the garlic and half of the sliced green onions. Cook for another 30–60 seconds.
  5. Stir in the kimchi juice, gochujang, soy sauce, and sugar. Mix well to create a flavorful sauce.
  6. Add the chilled rice and toss thoroughly until every grain is coated with the kimchi mixture.
  7. Stir-fry for 3–5 minutes, allowing the rice to become hot and lightly toasted.
  8. Add the peas and cook for another 1–2 minutes until heated through.
  9. Turn off the heat and drizzle in the sesame oil. Stir gently to combine.
  10. In a separate skillet, fry the eggs until the whites are set and the yolks reach your preferred level of doneness.
  11. Divide the kimchi fried rice among serving bowls and top each portion with a fried egg.
  12. Garnish with toasted sesame seeds, remaining green onions, and optional nori strips. Serve immediately.
