Turkish Menemen | Traditional Turkish Scrambled Eggs with Tomatoes
Turkish Menemen is a beloved traditional breakfast dish made with eggs gently scrambled into a flavorful mixture of ripe tomatoes, green peppers, olive oil, and aromatic seasonings. Simple, rustic, and incredibly satisfying, Menemen is a staple of Turkish breakfast tables and is traditionally served hot directly from the pan with crusty bread.
The dish begins with green peppers sautéed in olive oil until tender, followed by ripe tomatoes that are cooked until they become soft and saucy. Eggs are then added and gently stirred into the tomato mixture, creating soft, creamy curds while preserving the rich flavor of the vegetables. A pinch of salt, black pepper, and optional red pepper flakes adds warmth and depth.
Turkish Menemen can be enjoyed plain or customized with onions, feta cheese, sucuk (Turkish sausage), or fresh herbs. It is perfect for breakfast, brunch, or a quick light meal and comes together in about 25 minutes.
Cooking Method
- Heat the olive oil and butter in a skillet over medium heat.
- Add the green peppers and sauté for 4–5 minutes until softened.
- Add the onion if using and cook for another 2–3 minutes.
- Stir in the garlic and cook for 30 seconds.
- Add the chopped tomatoes and red pepper flakes.
- Season with salt and black pepper.
- Cook for 8–10 minutes, stirring occasionally, until the tomatoes become soft and saucy.
- Crack the eggs directly into the pan.
- Gently stir the eggs into the tomato mixture.
- Cook for 2–4 minutes, stirring occasionally, until the eggs are softly set but still creamy.
- Remove from the heat immediately to avoid overcooking.
- Garnish with fresh parsley and extra red pepper flakes.
- Serve hot with plenty of crusty bread.
