Potato Pancakes are crispy, golden cakes made with freshly grated potatoes, onion, eggs, and a touch of flour. With crunchy edges and a soft, tender center, these savory pancakes are a comforting and versatile dish enjoyed for breakfast, brunch, lunch, or as a satisfying side. Simple ingredients come together quickly before being pan-fried until beautifully golden. Serve them hot with sour cream, applesauce, fresh herbs, or your favorite dipping sauce for a delicious homemade meal.
Cooking Method
- Peel and grate the potatoes and onion using the large holes of a box grater.
- Place the grated potatoes and onion in a clean kitchen towel and squeeze firmly to remove as much excess liquid as possible.
- Transfer the potato mixture to a large bowl.
- Add the eggs, flour, optional garlic, salt, black pepper, and baking powder. Mix until evenly combined.
- Heat the vegetable oil in a large skillet over medium heat.
- Scoop about ¼ cup of the potato mixture into the skillet for each pancake and flatten gently into a thin, even round.
- Fry for 3–4 minutes per side, until deeply golden and crisp around the edges.
- Transfer the cooked pancakes to a wire rack or paper towel-lined plate to drain briefly.
- Repeat with the remaining mixture, adding more oil as needed.
- Serve immediately with sour cream, applesauce, chopped chives, or fresh parsley.
