Cooking Method
- Cook the chow mein noodles according to the package directions. Drain and set aside.
- In a small bowl, whisk the eggs with a pinch of salt.
- Heat 1 tablespoon of oil in a wok over medium-high heat. Add the eggs and scramble until just set. Remove and set aside.
- Add the remaining oil to the wok and stir-fry the onion, carrot, and bell pepper for 2–3 minutes.
- Add the cabbage, bean sprouts, garlic, and ginger. Stir-fry for another 2 minutes.
- Add the cooked noodles and toss with the vegetables.
- Stir in the soy sauce, oyster sauce, sesame oil, brown sugar, and black pepper.
- Return the scrambled eggs to the wok and toss everything together for 1–2 minutes.
- Add the green onions and mix briefly.
