A simple coconut glaze and toasted coconut topping add extra flavor and texture, making every slice irresistibly delicious.
Cooking Method
- Preheat the oven to 350°F (175°C). Grease a 10-inch Bundt pan thoroughly with butter and dust lightly with flour.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, beat the softened butter and sugar for 3–4 minutes until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla and coconut extracts.
- Add the dry ingredients in three additions, alternating with the coconut milk and sour cream. Mix just until the batter is smooth; avoid overmixing.
- Fold in the shredded coconut until evenly distributed.
- Pour the batter into the prepared Bundt pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the cake cool in the pan for 15 minutes, then carefully invert it onto a wire rack. Allow it to cool completely.
- Whisk together the powdered sugar, coconut milk, and vanilla extract until smooth. Drizzle the glaze over the cooled cake and sprinkle with toasted coconut before serving.
