Chicken & Shrimp Fried Rice | Flavorful Chinese-Style One-Pan Rice
Chicken & Shrimp Fried Rice is a delicious, protein-packed fried rice made with tender chicken, juicy shrimp, fluffy chilled rice, eggs, colorful vegetables, and savory Asian-inspired seasonings. Each grain of rice is stir-fried over high heat with garlic, soy sauce, sesame oil, and fresh green onions for a flavorful restaurant-style finish.
Using cold, cooked rice helps create the ideal fried rice texture, keeping the grains separate rather than soft or sticky. The combination of chicken and shrimp adds satisfying flavor and makes this dish hearty enough to serve as a complete lunch or dinner.

Cooking Method
- Make sure the cooked rice is completely chilled before starting.
- Break apart any large clumps of rice.
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat.
- Add the diced chicken and stir-fry for 4–5 minutes, until cooked through and lightly browned.
- Add the shrimp and cook for another 2–3 minutes, until pink and opaque.
- Remove the chicken and shrimp from the wok and set aside.
- Add another tablespoon of oil.
- Crack the eggs into the wok and scramble until just set.
- Remove the eggs and set aside with the chicken and shrimp.
- Add the remaining oil to the wok.
- Add the onion and carrots and stir-fry for 2–3 minutes.
- Add the garlic and cook for about 30 seconds.
- Add the chilled rice.
- Stir-fry vigorously for 3–5 minutes, allowing the rice to become lightly toasted.
- Add the peas and return the chicken, shrimp, and scrambled eggs to the wok.
- Add the soy sauce, oyster sauce if using, white pepper, and salt.
- Toss everything together until evenly coated and heated through.
- Drizzle in the sesame oil.
- Add the sliced green onions and stir-fry for another 1 minute.
- Taste and adjust the seasoning.
- Serve immediately while hot.
