Thai Pad Krapow is a popular Thai street food made with savory stir-fried minced chicken, fragrant holy basil, garlic, fresh chilies, and a flavorful combination of fish sauce and soy sauce. Cooking Method
- Heat 2 tablespoons of vegetable oil in a large wok or skillet over high heat.
- Add the chopped garlic and Thai chilies. Stir-fry for 30–60 seconds until fragrant, taking care not to burn the garlic.
- Add the ground chicken and stir-fry for 5–7 minutes, breaking it apart with a spatula until fully cooked and lightly browned.
- Add the fish sauce, light soy sauce, dark soy sauce, oyster sauce, sugar, and water or chicken broth. Stir well to coat the chicken.
- Cook for another 2–3 minutes, allowing the sauce to reduce slightly and coat the chicken.
- Turn off the heat and immediately add the holy basil leaves. Toss until the basil wilts from the residual heat.
- In a separate skillet, heat vegetable oil and fry the eggs until the whites are crisp and golden around the edges and the yolks are cooked to your preferred level.
- Spoon the hot Pad Krapow over steamed jasmine rice.
- Top each serving with a fried egg and garnish with cucumber or lime wedges if desired.
- Serve immediately while hot.
