 Caribbean Jerk Chicken is a bold and aromatic dish inspired by the traditional flavors of Jamaica and the wider Caribbean. Tender chicken is marinated in a vibrant jerk seasoning made with Scotch bonnet peppers, garlic, ginger, thyme, allspice, lime juice, and warming spices. The result is juicy chicken with a beautifully smoky, spicy, savory, and slightly sweet flavor. 

The secret to delicious jerk chicken is allowing the chicken to marinate long enough for the seasoning to penetrate deeply. It can be grilled over charcoal for an authentic smoky flavor or cooked on a grill pan or in the oven for a convenient homemade version. The high heat creates beautifully charred edges while keeping the chicken moist and flavorful inside. 

Caribbean Jerk Chicken is perfect for summer barbecues, family dinners, parties, and weekend gatherings. Serve it with rice and peas, fried plantains, Caribbean-style slaw, grilled vegetables, or a refreshing mango salsa for a complete tropical-inspired meal. 

Cooking Method


  1.  Place the Scotch bonnet peppers, garlic, ginger, lime juice, soy sauce, brown sugar, olive oil, thyme, allspice, cinnamon, nutmeg, black pepper, and salt in a blender or food processor. 
  2.  Blend until a smooth jerk marinade forms. 
  3.  Place the chicken in a large bowl or resealable bag. 
  4.  Pour the marinade over the chicken and massage it into the meat. 
  5.  Cover and refrigerate for at least 2 hours, preferably overnight. 
  6.  Remove the chicken from the refrigerator about 20 minutes before cooking. 
  7.  Preheat a grill or grill pan to medium-high heat. 
  8.  Remove excess marinade from the chicken. 
  9.  Grill the chicken for 6–8 minutes per side, turning occasionally. 
  10.  Continue cooking until the chicken is well charred and reaches a safe internal temperature. 
  11.  If the outside browns too quickly, move the chicken to a cooler part of the grill and continue cooking. 
  12.  Let the chicken rest for 5 minutes before serving. 
  13.  Garnish with fresh lime and herbs if desired. 
  14.  Serve with rice and peas, plantains, salad, or grilled vegetables.
