Mexican Tamales Recipe | Traditional Pork-Filled Corn Masa Tamales

 Mexican Tamales are traditional steamed corn masa parcels filled with tender seasoned pork and a rich red chili sauce, then wrapped in softened corn husks. A beloved staple of Mexican cuisine, tamales are commonly prepared for holidays, celebrations, family gatherings, and special occasions. The soft, fluffy masa absorbs the savory flavors of the pork and chili sauce while steaming creates the signature tender texture. Serve these homemade tamales hot with salsa, Mexican crema, fresh cilantro, or a simple side of beans for a comforting and flavorful meal. 

Cooking Method


  1. Soak the dried corn husks in warm water for 30–45 minutes, until soft and flexible. Drain well.
  2. Place the pork, garlic, onion, salt, and broth in a large pot. Bring to a boil, then reduce the heat and simmer for 1–1½ hours, until the pork is very tender.
  3. Meanwhile, soak the guajillo and ancho chilies in hot water for 15–20 minutes until softened.
  4. Blend the softened chilies with cumin, oregano, garlic, and a little soaking water until smooth. Strain the sauce.
  5. Shred the cooked pork and mix it with enough chili sauce to make a moist, flavorful filling.
  6. In a large bowl, beat the lard or shortening until light and fluffy.
  7. Add the masa harina, baking powder, and salt. Gradually mix in the chicken broth until a soft, spreadable dough forms.
  8. Spread about 2 tablespoons of masa onto the wide end of each softened corn husk, leaving space around the edges.
  9. Add a spoonful of pork filling down the center of the masa.
  10. Fold the sides of the husk inward, then fold the narrow end upward to enclose the filling.
  11. Arrange the tamales upright in a steamer, keeping the folded ends down.
  12. Cover and steam for 60–75 minutes, checking occasionally that the steamer has enough water.
  13. Tamales are ready when the masa pulls away easily from the corn husk.
  14. Let them rest for 5–10 minutes, then serve hot with salsa, crema, and fresh cilantro.
