French Croissant | Classic Buttery French Pastry Recipe
French Croissant is a classic French pastry known for its delicate flaky layers, rich buttery flavor, crisp golden exterior, and soft, airy center. Made from a laminated yeast dough, authentic croissants require patience and careful folding to create the signature hundreds of thin buttery layers.
The dough is prepared with flour, milk, yeast, sugar, salt, and butter before being rolled and folded repeatedly with a layer of chilled butter. This lamination process creates alternating layers of dough and butter. During baking, the butter releases steam, causing the layers to separate and producing the light, flaky texture that makes French croissants so special.
Freshly baked croissants are perfect for breakfast or brunch and can be enjoyed plain or filled with chocolate, almond cream, cheese, or fruit preserves. Serve them with coffee, tea, hot chocolate, or fresh fruit for an elegant French-style breakfast.
Cooking Method
- Combine the flour, sugar, salt, and yeast in a large mixing bowl.
- Add the cold milk and softened butter.
- Mix until a dough forms.
- Knead for 5–8 minutes until smooth.
- Shape the dough into a rectangle, cover, and refrigerate for 1 hour.
- Place the cold butter between sheets of parchment paper and gently pound or roll it into a flat rectangle.
- Roll the chilled dough into a larger rectangle.
- Place the butter in the center and fold the dough over it to completely enclose the butter.
- Roll the dough into a long rectangle.
- Fold it into thirds like a letter.
- Refrigerate for 30–45 minutes.
- Repeat the rolling and folding process 2 more times, chilling between each fold.
- Roll the laminated dough into a thin rectangle.
- Cut into long triangles.
- Make a small slit at the wide end of each triangle.
- Gently stretch and roll each triangle toward the pointed end to form a crescent shape.
- Place the croissants on a lined baking tray.
- Cover loosely and let them proof for 1½–2 hours, or until noticeably puffy.
- Whisk together the egg and milk.
- Brush the croissants gently with the egg wash.
- Bake at 400°F (200°C) for 10 minutes.
- Reduce the temperature to 375°F (190°C) and bake for another 10–15 minutes, until deeply golden and crisp.
- Cool slightly before serving.
