Thai Moo Satay Recipe | Authentic Thai Pork Satay with Peanut Sauce

 Thai Moo Satay is a popular street food made with tender pieces of marinated pork grilled on skewers until golden and lightly charred. The pork is infused with coconut milk, curry powder, turmeric, garlic, coriander, and aromatic spices, creating a rich and fragrant flavor. Traditionally served with creamy Thai peanut sauce, cucumber relish, and warm bread or rice, Moo Satay is a delicious appetizer or main dish for family meals and gatherings. The combination of smoky grilled pork, creamy peanut sauce, and refreshing cucumber relish makes this Thai favorite especially satisfying. 

Cooking Method


  1. In a large bowl, combine the coconut milk, curry powder, turmeric, coriander, cumin, garlic, brown sugar, fish sauce, soy sauce, vegetable oil, and salt.
  2. Add the thinly sliced pork and toss thoroughly to coat it in the marinade.
  3. Cover and refrigerate for at least 1 hour, or up to 8 hours for deeper flavor.
  4. While the pork marinates, prepare the cucumber relish. Combine the vinegar, sugar, and salt, stirring until the sugar dissolves. Add the cucumber, red onion, and optional chili. Refrigerate until ready to serve.
  5. Prepare the peanut sauce by combining peanut butter, coconut milk, red curry paste, brown sugar, fish sauce, lime juice, and warm water in a saucepan.
  6. Heat over low heat, stirring continuously, until smooth and slightly thickened. Do not boil vigorously.
  7. Thread the marinated pork onto soaked wooden skewers or metal skewers.
  8. Preheat a grill or grill pan over medium-high heat.
  9. Grill the pork skewers for 8–10 minutes, turning regularly, until cooked through and lightly charred.
  10. Transfer the Moo Satay to a serving platter and serve immediately with warm peanut sauce and cucumber relish.
