Cooking Method
- Heat the vegetable oil in a large skillet or pot over medium heat.
- Add the Thai red curry paste and cook for 1–2 minutes until fragrant.
- Add the onion, garlic, and ginger. Sauté for 2–3 minutes until softened.
- Add the sliced chicken and stir well to coat with the curry paste.
- Cook for 4–5 minutes, stirring occasionally, until the chicken begins to brown.
- Pour in the coconut milk and chicken broth. Add the kaffir lime leaves and bring to a gentle simmer.
- Add the bell pepper, fish sauce, and brown sugar. Simmer for 10–12 minutes, until the chicken is fully cooked and the sauce slightly thickens.
