Pumpkin Magic Cake is a delightful fall dessert made from a single thin batter that separates into distinct layers as it bakes. Cooking Method
- Preheat the oven to 325°F (165°C). Lightly grease an 8-inch (20 cm) square baking pan and line the bottom with parchment paper.
- Melt the butter and allow it to cool slightly.
- Separate the eggs, placing the yolks and whites in separate bowls.
- Beat the egg yolks with the sugar for 2–3 minutes until pale and creamy.
- Add the melted butter, pumpkin purée, and vanilla extract. Mix until smooth.
- Whisk together the flour, pumpkin pie spice, cinnamon, and salt. Gradually add the dry ingredients to the pumpkin mixture.
- Slowly pour in the lukewarm milk while whisking until the batter becomes thin and smooth.
- In a clean bowl, beat the egg whites until they form soft peaks.
- Gently fold the whipped egg whites into the batter. Do not fully incorporate them; a few visible streaks of egg white are fine. This helps create the distinct layers.
- Pour the batter into the prepared pan and bake for 50–60 minutes, until the top is golden and the center has a slight jiggle.
- Allow the cake to cool completely in the pan, then refrigerate for at least 30 minutes before slicing.
- Dust with powdered sugar, add a little cinnamon, and serve with whipped cream if desired.
