Sattu Paratha | Traditional Bihari Stuffed Paratha Recipe
Sattu Paratha is a traditional and hearty stuffed flatbread from Bihar, India, made with roasted gram flour known as sattu. This rustic Bihari specialty combines a soft whole wheat outer layer with a flavorful filling of sattu, onion, garlic, green chilies, fresh coriander, lemon juice, and aromatic spices.
The distinctive roasted gram flour filling gives Sattu Paratha its nutty, earthy flavor, while mustard oil adds an authentic Bihari touch. The filling is stuffed inside whole wheat dough, rolled carefully, and cooked on a hot tawa with ghee or oil until golden brown with crisp edges and a soft, flavorful center.
Sattu Paratha is traditionally enjoyed for breakfast or lunch with plain yogurt, pickle, chutney, or a spicy vegetable curry. It is filling, protein-rich, and perfect for everyday meals, lunchboxes, travel, or family gatherings.
Cooking Method
- In a large bowl, combine the whole wheat flour and salt.
- Add the oil and gradually mix in warm water.
- Knead into a soft, smooth dough.
- Cover and let the dough rest for 20–30 minutes.
- In another bowl, combine the sattu, onion, green chilies, garlic, coriander, lemon juice, mustard oil, cumin seeds, ajwain, red chili powder, roasted cumin powder, amchur, and salt.
- Add water gradually and mix until the filling is moist but crumbly rather than wet.
- Divide the dough into 6–8 equal balls.
- Take one dough ball and roll it into a small circle.
- Place a portion of the sattu filling in the center.
- Bring the edges together and pinch to seal the filling inside.
- Flatten gently and dust with flour.
- Roll carefully into a round paratha, about 6–7 inches wide.
- Heat a tawa over medium heat.
- Place the paratha on the hot tawa and cook until small bubbles appear.
- Flip and cook the other side for about 30–40 seconds.
- Brush with ghee or oil and flip again.
- Cook both sides until golden brown with crisp spots.
- Repeat with the remaining dough and filling.
- Serve hot with yogurt, pickle, or green chutney.
