Lamb Curry | Rich & Aromatic Slow-Cooked Lamb Curry
Lamb Curry is a rich, comforting, and deeply aromatic dish featuring tender pieces of lamb slowly simmered in a flavorful onion, tomato, garlic, ginger, and spice gravy. The slow cooking allows the lamb to become wonderfully tender while absorbing the warm flavors of cumin, coriander, turmeric, paprika, and garam masala.
This hearty curry is perfect for family lunches, weekend dinners, and special occasions. Serve it with steamed basmati rice, naan, roti, or paratha to soak up the delicious gravy.
Cooking Method
- Heat the oil in a large heavy-bottomed pot over medium heat.
- Add the cinnamon, cardamom, cloves, bay leaf, and cumin seeds.
- Cook for about 30 seconds until fragrant.
- Add the sliced onions and sauté for 8–10 minutes, until deep golden brown.
- Add the garlic and ginger and cook for another 1–2 minutes.
- Add the chopped tomatoes and cook until softened and the oil begins to separate.
- Add the coriander, cumin, turmeric, paprika, black pepper, and salt.
- Stir well and cook the spices for about 1 minute.
- Lower the heat and gradually stir in the yogurt.
- Add the lamb and mix thoroughly to coat it with the curry mixture.
- Cook for 7–10 minutes, stirring occasionally, until the lamb is lightly browned.
- Pour in the lamb stock or water.
- Add the green chilies if using.
- Bring to a gentle boil.
- Reduce the heat, cover, and simmer for 1½–2 hours, or until the lamb is tender.
- Stir occasionally and add a little water if the gravy becomes too thick.
- Remove the lid and simmer for another 10–15 minutes to thicken the curry.
- Stir in the garam masala.
- Garnish with fresh cilantro.
- Serve hot with basmati rice, naan, roti, or paratha.
