Thai Green Curry Recipe | Authentic Thai Green Chicken Curry
Thai Green Curry is a fragrant and creamy Thai dish made with tender chicken, aromatic green curry paste, coconut milk, Thai basil, and fresh vegetables. Known for its vibrant color and distinctive balance of spicy, savory, slightly sweet, and herbaceous flavors, this classic Thai curry is a favorite around the world. The curry paste brings together green chilies, garlic, lemongrass, galangal, and fragrant herbs, while coconut milk creates a smooth and rich sauce. Traditionally served with steamed jasmine rice, Thai Green Curry makes a satisfying lunch or dinner.
Cooking Method
- Heat the vegetable oil in a large pot or deep skillet over medium heat.
- Add the green curry paste and cook for 1–2 minutes, stirring constantly until fragrant.
- Add about ½ cup of the coconut milk and stir well. Simmer for 2–3 minutes until the mixture becomes aromatic and slightly thickened.
- Add the sliced chicken and stir to coat it thoroughly with the curry mixture.
- Cook for 3–4 minutes, stirring occasionally, until the chicken begins to turn opaque.
- Pour in the remaining coconut milk and chicken broth. Add the kaffir lime leaves and bring to a gentle simmer.
- Add the Thai eggplant, bell pepper, and bamboo shoots. Simmer for 10–12 minutes, or until the vegetables are tender and the chicken is fully cooked.
- Stir in the fish sauce and brown sugar or palm sugar. Taste and adjust the seasoning as needed.
- Turn off the heat and stir in the lime juice and Thai basil leaves. Allow the basil to wilt gently in the hot curry.
- Garnish with fresh Thai basil and optional sliced green chilies.
- Serve immediately with steamed jasmine rice and fresh lime wedges.
