Mexican Quesadillas | Crispy Cheese-Filled Mexican Tortillas

Mexican Quesadillas are a simple, comforting, and versatile Mexican dish made by filling tortillas with melted cheese and cooking them until the outside is lightly crisp and golden. They can be enjoyed as a quick snack, appetizer, breakfast, lunch, or easy family dinner.

Traditional quesadillas can be made with corn or flour tortillas and a variety of Mexican cheeses such as Oaxaca, Chihuahua, or Monterey Jack. While cheese is the classic filling, you can also add cooked chicken, beef, mushrooms, beans, peppers, or vegetables for a more substantial meal.

The tortillas are cooked on a hot skillet until the cheese melts and the edges become beautifully crisp. Served with fresh salsa, guacamole, sour cream, or Mexican crema, these quesadillas offer a delicious contrast between a crunchy tortilla and warm, gooey cheese. They are quick to prepare and make an excellent choice when you want a flavorful Mexican-inspired meal without complicated cooking.

Cooking Method


  1.  Heat a large skillet or griddle over medium heat. 
  2.  Lightly brush the skillet with butter or oil. 
  3.  Place one tortilla in the pan. 
  4.  Sprinkle a generous layer of cheese over half of the tortilla. 
  5.  Add cooked chicken, onion, and bell pepper if using. 
  6.  Sprinkle a little fresh cilantro over the filling. 
  7.  Fold the tortilla in half to cover the filling. 
  8.  Cook for 2–3 minutes, until the bottom is golden and crisp. 
  9.  Carefully flip the quesadilla. 
  10.  Cook for another 2–3 minutes, until the cheese is completely melted and the second side is golden. 
  11.  Repeat with the remaining tortillas and filling. 
  12.  Transfer the quesadillas to a cutting board. 
  13.  Let them rest for about 1 minute before cutting. 
  14.  Slice into wedges. 
  15.  Serve hot with salsa, guacamole, sour cream, or Mexican crema.
