Blueberry Bundt Cake Recipe | Moist & Easy Homemade Blueberry Cake
Blueberry Bundt Cake is a moist, tender, and buttery homemade cake filled with juicy blueberries and finished with a simple sweet glaze. The blueberries add bright fruity flavor to every slice, while sour cream or Greek yogurt helps create a soft, rich crumb that stays deliciously moist. Baked in a classic Bundt pan, this beautiful cake is perfect for breakfast, brunch, afternoon tea, holidays, potlucks, birthdays, or a comforting homemade dessert. Serve it plain, dusted with powdered sugar, or topped with a lemon glaze for an extra burst of freshness.
Cooking Method
- Preheat the oven to 350°F (175°C). Thoroughly grease a 10-inch Bundt pan with butter and dust lightly with flour.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, beat the softened butter and sugar for 3–4 minutes until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and lemon zest.
- Add the dry ingredients in three additions, alternating with the sour cream or Greek yogurt. Mix just until combined; do not overmix.
- Gently fold in the blueberries, taking care not to crush them.
- Spoon the batter evenly into the prepared Bundt pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the thickest part comes out clean or with a few moist crumbs.
- Let the cake cool in the pan for 15 minutes, then carefully invert it onto a wire rack and allow it to cool completely.
- Whisk together the powdered sugar, lemon juice, and milk to make the glaze. Drizzle over the cooled cake and slice to serve.
