Japanese Teriyaki Chicken Recipe | Easy Glazed Chicken with Homemade Teriyaki Sauce
Japanese Teriyaki Chicken is a classic Japanese-inspired dish featuring tender chicken coated in a glossy, savory-sweet teriyaki sauce. Made with soy sauce, mirin, sake, ginger, and a touch of sugar, the sauce caramelizes beautifully around the chicken, creating a rich glaze with deep umami flavor. This easy recipe is perfect for a quick family lunch or dinner and pairs wonderfully with steamed Japanese rice and vegetables.
Cooking Method
- Pat the chicken thighs dry and lightly season with salt and black pepper.
- Mix the soy sauce, mirin, sake, brown sugar, ginger, garlic, and water in a bowl.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Place the chicken skin-side down if using skin-on thighs and cook for 5–6 minutes until golden brown. Flip and cook for another 4–5 minutes.
- Reduce the heat to medium and pour the teriyaki sauce into the skillet.
- Simmer for 5–7 minutes, turning the chicken occasionally, until fully cooked and the sauce becomes glossy and slightly thickened.
- If a thicker sauce is desired, mix the cornstarch with 1 tablespoon of cold water and stir it into the sauce. Cook for 1–2 minutes until thickened.
- Remove the chicken from the skillet and let it rest for 3–5 minutes.
- Slice the chicken and drizzle with the remaining teriyaki glaze.
- Garnish with sesame seeds and sliced green onions.
- Serve hot with steamed Japanese rice and vegetables.
