Cooking Method
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan and line the bottom with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt.
- In another bowl, whisk the pumpkin purée, sugar, eggs, oil, and vanilla until smooth.
- Gradually add the dry ingredients to the pumpkin mixture and stir just until combined.
- Pour the batter into the prepared pan and bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely, then cut or tear it into bite-sized cubes.
- Prepare the pudding by whisking the instant pudding mix with cold milk until thickened. Stir in the pumpkin purée and pumpkin pie spice.
- In a separate bowl, whip the heavy cream with powdered sugar and vanilla until soft, fluffy peaks form.
- In a large trifle bowl, arrange a layer of pumpkin cake cubes, followed by a layer of pumpkin-vanilla pudding.
- Add a layer of whipped cream, then repeat the cake, pudding, and cream layers until the bowl is filled.
- Finish with a generous layer of whipped cream. Sprinkle with chopped pecans, cinnamon, and pumpkin pie spice.
- Cover and refrigerate for at least 2 hours before serving so the flavors can blend and the cake becomes tender.
