Japanese Shoyu Ramen | Classic Soy Sauce Ramen with Tender Chicken

 Japanese Shoyu Ramen is a comforting and flavorful noodle soup known for its clear, savory broth seasoned with Japanese soy sauce. The word shoyu means soy sauce in Japanese, and it gives this ramen its characteristic deep amber color, salty-savory flavor, and rich umami taste without making the broth overly heavy. This homemade version combines ramen noodles with a fragrant broth made from chicken stock, garlic, ginger, green onions, and shoyu. 

Tender chicken, soft-boiled eggs, mushrooms, and fresh green onions add delicious texture and make the bowl satisfying and complete. A small drizzle of sesame oil adds another layer of aroma, while nori and chili oil can provide optional finishing touches. 

Japanese Shoyu Ramen is perfect for a cozy lunch or dinner and can easily be customized with pork, shrimp, tofu, corn, bamboo shoots, spinach, or other favorite toppings. Although traditional ramen broth can take many hours to prepare, this approachable homemade version delivers wonderful Japanese-inspired flavor in much less time. 

Cooking Method


  1.  Heat the chicken broth in a large pot over medium heat. 
  2.  Add the garlic, ginger, and white parts of the green onions. 
  3.  Simmer gently for 15–20 minutes to develop the flavor. 
  4.  Add the sliced chicken and cook for 5–7 minutes, or until fully cooked. 
  5.  Remove the ginger and green onion pieces from the broth. 
  6.  Stir in the shoyu, sesame oil, and sugar. 
  7.  Taste the broth and add a small amount of salt if needed. 
  8.  In a separate pot, cook the ramen noodles according to the package instructions. 
  9.  Drain the noodles well. 
  10.  Divide the noodles among four serving bowls. 
  11.  Pour the hot shoyu broth over the noodles. 
  12.  Arrange the cooked chicken, mushrooms, and halved soft-boiled eggs on top. 
  13.  Garnish with sliced green onions and strips of nori. 
  14.  Add chili oil or sesame seeds if desired. 
  15.  Serve immediately while the ramen is piping hot.
