Indian Baingan Bharta Recipe | Authentic Roasted Eggplant Curry

 Indian Baingan Bharta is a classic North Indian vegetarian dish made with fire-roasted eggplant mashed and cooked with onions, tomatoes, garlic, ginger, and aromatic spices. Roasting the eggplant over an open flame or in the oven gives it a rich smoky flavor that makes this dish truly distinctive. Combined with a flavorful onion-tomato masala, Baingan Bharta becomes a comforting and wholesome curry that pairs perfectly with roti, naan, paratha, or steamed basmati rice. Naturally vegan and packed with flavor, this traditional Indian recipe is a favorite for everyday meals and special family dinners. 

Cooking Method


  1. Roast the eggplants directly over an open flame or bake them at 425°F (220°C) for 30–35 minutes, turning occasionally, until the skin is charred and the flesh is soft.
  2. Allow the eggplants to cool slightly, then peel off the skin and mash the flesh. Discard any large seeds if desired.
  3. Heat the oil in a large skillet over medium heat.
  4. Add the cumin seeds and let them sizzle for a few seconds.
  5. Add the chopped onions and sauté until golden brown.
  6. Stir in the garlic, ginger, and green chilies, cooking for 1 minute until fragrant.
  7. Add the chopped tomatoes and cook for 6–8 minutes, stirring until softened and the oil begins to separate.
  8. Mix in the turmeric, coriander, cumin, red chili powder, garam masala, and salt. Cook for 1 minute.
  9. Add the mashed roasted eggplant and mix thoroughly with the masala. Cook for 8–10 minutes, stirring occasionally, until the flavors are well combined.
  10. Garnish with fresh cilantro and serve hot with roti, naan, paratha, or steamed basmati rice.
