Chinese Jiaozi are traditional dumplings made with thin wrappers filled with seasoned ground pork, cabbage, green onions, garlic, and ginger. These beloved Chinese dumplings can be boiled, steamed, or pan-fried until tender with a delicious savory filling. Often enjoyed during family gatherings and especially associated with Lunar New Year celebrations, Jiaozi are comforting, flavorful, and easy to customize. Serve them hot with a simple soy-vinegar dipping sauce for a delicious appetizer, snack, or meal.

  1. Mix the flour and salt in a bowl. Gradually add warm water and knead for 8–10 minutes until a smooth dough forms.
  2. Cover and let the dough rest for 30 minutes.
  3. Combine the ground pork, cabbage, green onions, garlic, ginger, soy sauce, sesame oil, rice vinegar, sugar, and black pepper.
  4. Divide the dough into small portions and roll each into a thin circle.
  5. Place about 1 tablespoon of filling in the center of each wrapper.
  6. Fold the wrapper over the filling and pinch or pleat the edges firmly to seal.
  7. Bring a large pot of water to a gentle boil.
  8. Add the Jiaozi in batches and stir gently to prevent sticking.
  9. Cook for 5–7 minutes, or until the dumplings float and the pork filling is fully cooked.
  10. Mix the dipping sauce ingredients in a small bowl.
  11. Remove the dumplings with a slotted spoon and drain well.
  12. Serve hot with the soy-vinegar dipping sauce.
