Classic French Fries Recipe | Crispy Golden Homemade Fries

Classic French Fries are crispy, golden potato sticks with a fluffy, tender center and a perfectly seasoned exterior. This homemade recipe uses russet potatoes, a simple soaking step, and double frying to create restaurant-style fries with an irresistibly crunchy texture. The first fry gently cooks the potatoes, while the second fry at a higher temperature creates the crisp golden finish. Perfect alongside burgers, sandwiches, fried chicken, grilled meats, or enjoyed as a snack with ketchup, mayonnaise, or your favorite dipping sauce.

Cooking Method

  1. Wash and peel the potatoes, then cut them into evenly sized sticks about ¼ inch (6 mm) thick.
  2. Place the cut potatoes in a large bowl of cold water and soak for at least 20–30 minutes to remove excess starch.
  3. Drain the potatoes and rinse them once more with cold water.
  4. Pat the potatoes completely dry with clean kitchen towels or paper towels. Removing excess moisture helps prevent oil splattering and improves crispiness.
  5. Heat the oil in a deep, heavy-bottomed pot to 325°F (165°C).
  6. Fry the potatoes in small batches for 4–5 minutes, until softened and pale but not browned.
  7. Remove the potatoes with a slotted spoon and drain on a wire rack. Repeat with the remaining batches.
  8. Increase the oil temperature to 375°F (190°C).
  9. Return the partially cooked potatoes to the hot oil in small batches and fry for another 2–3 minutes, until golden brown and crispy.
  10. Transfer the fries to a wire rack or paper towel-lined plate and immediately season with salt.
  11. Add black pepper, paprika, or garlic powder if desired.
  12. Serve hot with ketchup, mayonnaise, ranch dressing, garlic aioli, or your favorite dipping sauce.
