Coconut Truffles Recipe | Easy No-Bake Chocolate Coconut Balls
Coconut Truffles are delicious bite-sized no-bake treats made with sweetened shredded coconut, condensed milk, and a smooth chocolate coating. Creamy, chewy, and wonderfully coconutty, these homemade truffles are easy to prepare with simple ingredients and require no oven. Cooking Method
- Combine the shredded coconut, condensed milk, butter, and vanilla extract in a large bowl.
- Mix thoroughly until the coconut is evenly coated and the mixture becomes thick and sticky.
- Refrigerate the mixture for 30 minutes to make it easier to shape.
- Scoop out small portions and roll them into approximately 1-inch (2.5 cm) balls.
- Place the coconut balls on a parchment-lined tray and refrigerate for another 15 minutes.
- Melt the chocolate in a microwave-safe bowl in 20–30 second intervals, stirring between each interval until smooth.
- If desired, stir in the coconut oil or shortening to create a smoother coating.
- Dip each chilled coconut ball into the melted chocolate, coating it completely. Lift with a fork and allow excess chocolate to drip off.
- Place the coated truffles back on the parchment-lined tray and immediately sprinkle with toasted coconut or chopped almonds if desired.
- Refrigerate for 15–20 minutes, or until the chocolate coating is completely set. Drizzle with white chocolate if desired and serve.
