Indian Bhatura | Authentic Puffy Bhatura Recipe
Indian Bhatura is a soft, fluffy, and deep-fried North Indian bread that is traditionally served with Chole (spiced chickpea curry). Famous for its golden exterior and airy interior, Bhatura is a popular breakfast, lunch, and festive dish across India. Made from all-purpose flour, yogurt, and a touch of baking powder or yeast, the dough ferments to create a light texture that puffs beautifully when fried.
The dough is kneaded until smooth, rested to develop flavor and elasticity, and then rolled into oval or round discs before being fried in hot oil. Within seconds, the bread inflates into a soft, golden pillow with a crisp outer layer and tender inside.

Cooking Method
- In a large bowl, combine the flour, semolina, sugar, salt, baking powder, and baking soda.
- Add the yogurt and oil.
- Gradually pour in the warm water and knead into a soft, smooth dough.
- Knead for 8–10 minutes until elastic.
- Cover the dough and let it rest for 2–3 hours in a warm place.
- Divide the dough into equal-sized balls.
- Roll each ball into an oval or round shape about ¼ inch thick.
- Heat the oil in a deep pan to 350–375°F (175–190°C).
- Carefully slide one Bhatura into the hot oil.
- Gently press with a slotted spoon until it puffs.
- Flip and fry the other side until golden brown.
- Remove and drain on paper towels.
- Repeat with the remaining dough.
- Serve hot with Chole, pickles, onions, and yogurt.
